Beefalo is a cross between domestic cows and the American bison. A full blood Beefalo contain 3/8 (37.5%) Bison. The minimum percentage of bison to be Beefalo is 17%. Beefalo is a low cholesterol, low fat, low calories, high protein. Beefalo cooks in 1/2 to 2/3 the time of regular beef.
